How to Sharpen – A Quick Start (No Stress)

Choose an angle : 17° for precision knives, 20° for kitchen/universal knives.

Choose a starting grit :

• #240 – repairing chips, reprofiling

• #400 – shaping edges after repair

• #600 – achieving working sharpness

• #1000 – smoothing and polishing

Place the blade on the guide, applying light pressure , using smooth movements along the entire length. Only

change grits when the scratches from the previous one are even across the entire edge.

Finally , rinse and dry the plate . (Work damp – cleaner edge and less dust).

Cheat sheet for selecting the angle

17° – kitchen santoku/gyuto, fillet, precision knives (higher sharpness)

20° – chef's knives, universal, outdoor/EDC (higher durability)

The most common mistakes and how to avoid them

Too much pressure → light, even strokes (the diamond works "on its own")

 Jumping from #240 straight to #1000 → go through the steps: 240 → 400 → 600 → 1000

Variable angle → keep the blade close to the guide – it sets the geometry

Benefits

Quick results from repair to polishing in one tool

Magnetic plate exchange – no screws, complete convenience

Repeatability – the guide trains the hand and gives consistent results

Easy cleaning – water + soft brush, no oils

Attention

• Not for toothed knives .

• With very hard steels, work patiently, apply little pressure , and pass the gradation completely.
