How to Sharpen (5 Steps in Shortcut)

Set up the SHARPI SYSTEM (optionally screw the base to the countertop).

Place the knife in the vise, center it and tighten the jaws.

Set the angle with the inclinometer, fine-tune it with micro-adjustment and lock the guidance.

Sharpen in this order:200/360 → 600/1000 → ceramic → leather.

Turn the knife in the vise (without unscrewing it) and repeat the same procedure on the other side.
